I just made a delicious dinner that was super easy and ds loved it! I thought it would be fun to share some recipes that our lo's could eat too.
boneless skinless chicken - cut into chunks
flour
olive oil
1 can lentil soup
1 can canallini beans - rinsed and drained
1 cup frozen spinach
rice
Season flour with salt and garlic powder. Roll chicken in flour. In a large skillet, heat enough olive oil to coat the bottom of the pan. Cook chicken for a couple minutes on each side until cooked through and browned. Add beans, lentils and spinach. Add salt and garlic powder to taste. Cook until beans are tender. Serve over rice.
*edit to add that this dish is not particularly pretty but it is very tasty and full of protein and iron.

Yum! I do the chicken strips this same way, too.
DD loves chicken so often I'll make chicken breast with green beans.
For the chicken: I season it lightly with sea salt and pepper. Heat up ovilve oild and brown it for a couple minutes on each side, then I add 1/5 cup water (or so), turn the heat just a bit and cover it. Just when the water is about evaporated, I flip the chicken, add water again and cover again. the chicken is extremely tender this way. I can give strips to DD and she can easily bite it off even with only two teeth.
For green beans: Steam or boil, then shock with cold water. Warm up a bit of olive oil and add abou two strips of diced bacon and a little bit of shallots. When bacon is getting nice and done add the green beans back in. It's delish! DD doesn't like veggies but she loves green beans prepared this way as it gives it more flavor.

My Ovulation Chart
Devein and dice tiger shrimp into baby bite size pieces.
In med hot skillet, melt butter.
Cook shrimp for about two min until light orange but don't cook all the way or it will be too chewy.
Add broccoli and/or other veggies
Keep stirring while adding minced garlic... about a teaspoon for a handful of shrimp.. but you can adjust amount of garlic.
I added a bit of water in the end and cooked for another 30 seconds so that it stays moist.
Depending on size of veggies you should add earlier if its bigger so that it softens by the time shrimp it's done.
Serve with brown rice.
