Actually, a lack of fiber in the diet can trigger diarrhea, so it could help her. I serve it with a braut, grilled cheese, or baked chicken sandwich (just bake chicken and shred with some bbq sauce.)
Have you found any dairy-free cheese that is worth eating? If yes, I'd do cheese quesadillas and guacamole. If not, I'd do cornbread and a mexican salad with lots of tomatoes and avocados.
Thanks for all the suggestions! Making me hungry already. And no, I would rather not eat cheese than the dairy free varieties that I have tried

?Place second can of beans and broth in blender and puree until smooth; add to stockpot.
Stir third can of beans (do not puree first), tomatoes and green chilies, and corn into stockpot. Bring to a boil, lower heat to medium and simmer for 20 to 25 minutes. Yields about 1 1/2 cups of soup per serving
arroz con pollo? just toss some seared chicken breasts and thighs in with the rice as you're cooking it. I also like to add olives. that way, you could mix the beans in with the rice. YUM.

Re: What to serve with black bean soup?
corn bread and a salad?
And, yes maybe a little crazy. But you never know until you try it. Maybe the beans won't be a trigger.
