dinner

anyone else just feel far too drained by the end of the day to make a proper dinner? my little guy deserves a good meal, but mommy just wants cereal and bed....

any quick easy recipes anyone wants to share?

  • I eat an avocado, salsa, and chips some night. The avocado is great and fills me up.

  • My go-to this pregnancy has been cooking with the crockpot. I put dinner together in the morning while DD is eating breakfast and I still have energy. Then, when dinner time rolls around and I am utterly exhausted DH and DD have a nice, healthy dinner ready for them!

  • Crock pot!!

    One of my easy faves is to throw a whole chicken in. Rub it with some spices/herbs and salt & pepper. Then when you get home, roast some veggies to go with it and have some bagged salad. Drizzle the veggies with olive oil, garlic and a dash of salt & lemon juice and stick in the oven on 400 for about 30 minutes. I even chop my veggies the day before to save time. Voila!

  • Made a nice big pot of soup last night, put 1/2 in the freezer and will eat the other half this week, probably tomorrow night and then for a lunch. It's potato leek and spinach (so more nutritious then a lot of other things I eat...). I'm so happy that at least for a couple of meals when I'm feeling drained I have it there.

     Mac and cheese had been my go-to lazy meal (at least once a week). Since I can bank on being hungry again in an hour or 2, I just try to snack on lots of veggies and fruit the rest of the night. I find eggs are also a great quick and easy meal.

  • Hubby makes it home 1 1/2 before me so he usually cooks but it is super limited and super time efficient.  If he gets distracted then things burn(like hot dogs) he just left them on the grill for 30 minutes. Super nose smelled the burning.

     Anyhoo...tonight is lemon parmesan tilapia.  I think it's mayo cheese spices and lemon juice mixed together and put on the tilapia while it broils.  It takes about 10-20 minutes start to finish to make(Depending on how fast you mix).

  • I try to cook 3 meals on Sunday so when I get home during the week I can just heat them up. If I cook during the week, I throw something in the crockpot so its ready when I get home. My favorites are chilli and soups. And if I don't feel like eating what I've cooked then I just eat cereal Wink

  • When I can't be bothered to make anything else, I stick a potato in the microwave and top with whatever looks good from my fridge (salsa, sour cream, cottage cheese, leftover chicken, steamed veggie, cheddar cheese, etc.)
    We said "I Do" on 9/27/2008!

  • I prep all the meat on the weekend when I have energy and freeze. It only takes 10 minutes to layer a lasagna when the meat is already browned.

    Taco meat, sloppy joes, chili, veggie soup, and spaghetti sauce are always prepped in my freezer for weekdays when I just can't deal with standing in front of a stove too long.

    I usually have pulled pork, sliced ham, and poached chicken in my freezer too for easy sandwiches or throwing onto a salad or quesadilla. All 3 cook with almost no effort in my crockpot over the weekend when I have the energy to shred and package everything.
