S/O Birthday cakes...

What kind of cake are you making for LO's birthday cake?

I was going to make a chocolate cake, but my mom advised against it - evidently chocolate can really wreak havoc with the digestive system.  So, I guess I'm going to make a white cake, but I'm having a hard time coming up with a filling (going to do a 2 layer cake) besides just using regular frosting.  Anyone doing a layer cake?  What are you using for a filling?

  • I'm not sure what it'll look like yet, but I'm making a vanilla cake with blueberry filling and blueberry buttercream frosting. DS loves blueberries, so it was an easy decision for me.

    I'm going to make a smaller one for him (going to cut out two small rounds) as a mini-version of the one everyone else will be sharing.

  • Vanilla cake with some sort of fruit or jam type filling I think. Buttercream frosting. I was going to do chocolate cake, but since I want to use white frosting I think it'll be better to do vanilla cake.

  • I'm doing chocolate.  I know that anecdotal evidence isn't always the best, but I know plenty of babies Jane's age who have already had chocolate with no ill effects.  I figure that her little tummy will probably have sugar overload no matter what kind of cake it is, so we might as well make it tasty!  We're also not going to be able to get her anything big, so I say that we're giving her the gift of chocolate for her birthday!

     That said, I'm lucky to make a sheet cake that looks decent, so I'm going to make lots of cupcakes instead.

    This is my general idea as well. Although, not sure if I will do chocolate or vanilla. Nothing to do with food issues just my in decisiveness.

    Since we are doing pink John Deere for a theme, I might do white cupcakes, with white frosting, and sprinkle with pink, yellow, and green sprinkles.

    I don't do fancy cakes and am certainly not paying someone else do it for me. The sprinkles are as fancy as I get. lol.

  • Thanks everyone!  I hadn't thought about doing a fruit filling, maybe I'll do that!  And I agree on the decorations.  I'm doing vanilla frosting and decorating with different kinds of M&Ms (which we'll remove from DS' piece before we give it to him).  I found a pic online (it's in the birthday cake post a few down) and it looks really cute and is SUPER easy.  I'm not paying someone to bake and decorate a cake for me.

  • DS is MSPI and may also be sensitive to eggs and wheat, so I'm just hoping the cake I make him is somewhat edible and looks halfway decent! I'm thinking of using barley flour and flax meal as an egg substitute, which I've had some success with in other baked goods. For "frosting" I was thinking of whipped sweet potato, the white flesh variety. Maybe mixing in some smashed peas for green frosting to decorate with. Weird, I know!

    Check out this list of  healthy 1st bday cakes. Apple Spice cake, 3rd recipe or down or so. It has flour but you can substitute a different type I'm sure.

  • I think we are going to go with a vanilla cake (Layered) with banana creme filling and whipped icing.

    I will also be making a smash cake. I think it will be vanilla too. I don't really want to introduce chocolate yet because he has had stomach issues.
