So, I meal planned for the first time. My BMB bushes have me convinced it's like the greatest... Anyway, I have on the stove some delicious Chicken Tortilla Soup simmering away. I've made it before, and it's delicious!!!!
What I like to do with Salmon is sear it on the stove top with just a little salt and pepper. Then put in the oven for about 10-15 minutes after placing this sauce:
1 1/2 tablespoons olive
oil, 1/2 tablespoon toasted sesame
oil, 1 1/2 tablespoon brown
sugar, 1 garlic clove, minced or
pressed, and 1/2 tablespoon toasted sesame
seeds.

With salmon, it's sooo yummy when you use an herb cream cheese spread, spinach and a salmon steak wrapped in phyllo dough and baked for 45 minutes. Yum...
We're doing breakfast for dinner. I'm not feeling like making anything.
Here's our "go to" salmon recipe
Balsamic Glazed Salmon
2 skinless salmon filets
1/4 c balsamic vinegar
1.5 t whole grain mustard
2.5 t honey
Bring the vinegar, mustard and honey to a boil over medium high heat and let it bubble away until it reduces and becomes thick and syrupy, about 5 minutes.
Broil the salmon in the oven until cooked through, about 8 to 10 minutes and flipping the filets 1/2 way through cooking.
In the last 2 to 3 minutes of cooking time, brush the balsamic glaze onto the salmon and allow to caramelize onto the salmon.
We serve this with a rice side dish, roasted asparagus, pasta, etc.
The only salmon item I can tolerate is salmon cakes/patties and then they have to be smothered in hot sauce and ketchup.
I made large quantities of daal (lentils) on Sunday and chicken soup yesterday, so its leftovers tonite and next couple of nights. I probably wont cook again until Thursday.

LOL. I am making salmon so that I DO get some tonight. It is light weight and won't make us feel bloated. These 2nd tri hormones are kicking in.
I like to bake salmon with a bit of butter and whatever seasonings I have sitting around, but I am boring. I found this recipe https://www.foodnetwork.com/recipes/melissa-darabian/salmon-cakes-recipe/index.html I haven't tried it but it sounds great!
Tonight is taco night. I just started meal planning on a two week rotation so every other Tuesday is taco night. I am already bored!
