NTR: Panini ideas?

My friend is coming over for a birthday dinner on Sunday and when I asked her what her favorite thing to eat is she said that currently it is paninis.  I was able to find a really nice, inexpensive maker on craigslist but am now looking for recipes.  I was thinking a "make your own panini bar" or something like it.  It will be just my family and hers so nothing huge.  Any recipe suggestions or things that would be good for the "bar"?  Thanks!

    Chicken, spinach, pesto or chicken, spinach, red peppers or carmelized onions with provolone - yummy!

  • There is a place here in town that does a great one that I have copied.  Thin sliced tomato, cucumber, and muchrooms, olives, provolone,white American cheese, pesto on one side and herb and garlic spreadable cheese on the other.  It is amazing.  You can also add turkey for those who don't like the vegetarian.  I'm not a vegetarian at all, but I love this pannini. It's alot to fit in, but it all reduces in size once pressed in the panini.
