any advice?

My son just turned 2 and has always had feeding issues.  He was born at 32 weeks so he was very delayed in learning how to nurse and drink from a bottle, then he leaerned but would strangle on milk sometimes.  When he started wanting to eat solids he would choke and gag, sometimes to the point of vomitting.  He went to a speech therapist again to learn to eat solids - she said he was tongue tied, but thought it would fix itself and he would get it.  Well, he didn't.  So six months later I found another speech pathologist who worked with him some more and did swallow studies etc ... she wanted to wait until this spring to see if he could get it.  I pitched a fit because I am sick of my son not being able to eat and wanting to, all the while either not gaining weight or losing weight.  So about a month ago I finally got my son's ENT to clip his frenulum.  The ENT said he had never seen anyone so tongue tied and he said he had never had one release so well. 

Now my sons tongue has all sorts of movement, he doesn't realize he can eat new stuff.  He still only eats things that dissolve in his mouth like Cheerios and crackers or things that he can easily swallow like yogurt and pudding. 

 Has anyone had anything similar happen and does anybody have any kind of advice for me on how to get him to realize he can eat anything he wants to now?

We will meet with the therapist in two weeks, but for now, I want to get him eating, plus I am hoping we won't have to be in therapy much longer.
