We don't stop him from chewing on the crib. Whenever we have LO2, they'll tear it up the same way. I can always restain it later if I decide to convert it to a bed or gift it.
Our poor daughter had apparently been chewing on her rails for a while because one day she spit up and it was SUPER dark brown stuff and it was the stain! It's really bad for them. I ordered some soft tie on covers for the rails from amazon and we've been good to go since then.

I found a easy, cute and affordable option on pinterest. I bought 1 yd of fleece at Jo-Ann w/ a 50% coupon. I would've like to do the entire side rails, so I'd recommend 2 yds to finish it completely.
we have a crib from ikea and they sold these plastic rail covers when we bought the crib. they snap on tightly around the rail, and they work pretty well. if you happened to get your crib there you should check it out.
Re: Baby Woodchuck
I use this fabric one and it works well. If I were handier with a sewing machine I would make one.
