Looking for new chicken breast recipes!

I am in a cooking rut and feel like I make the same few things all.the.time.  So I am in search of some new chicken breast ideas/recipes for tonight.  Please share your favorite or favorites, thanks!

  • Cut boneless skinless chicken breast into 1 or 2 bite chunks.  Fully cook on the stove with garlic, onion, (I use dried minced onions) salt, pepper, oregano.  Once chicken is cooked, put monterey jack cheese on top of the chicken.  Pour a bit of water or chicken broth in the bottom of the pan to create some steam and cover until cheese is melted.  Pour alfredo on top of all that.  Cover for a few minutes until alfredo warms up.  Put mozzarella cheese on top of that.  Cover again until cheese is melted.  Top with green onions and serve.

    That's my most favorite chicken breast recipe.  It goes great with sauteed zuchinni or green beans or salad, or pretty much anything. :D

  • For a quicky recipe take a few tablespoons of breadcrumbs with an equal amount of Parmesan cheese.  Spread a little mayo over the top of the chicken breasts (sounds weird - but it keeps them really moist) generously sprinkle the cheese mixture and bake at 375.

  • Crock Pot Buffalo Chicken:

    2-3 Lbs of boneless, skinless chicken

    12 oz (whole small bottle) of Frank's Hot Sauce

    1 Package of Hidden Valley Ranch mix (just the powder, don't make it)

    Put all ingredients in Crock Pot.  Make sure chicken is covered by sauce/ranch mix.  Cook on low for 4-5 hours.  Shred chicken, and cook for another hour.  

    You can either put it on hamburger buns with mozzerella cheese and ranch dressing or blue cheese or make roll-ups with the cheese, lettuce and dressing.

    The last time I checked nobody posted anything so I found a recipe with chicken breasts topped with bacon, sugared onions, and cheese that I'm making today. Won't help me lose the last of my baby weight, but sounds awesome. :-)

    The alfredo recipe I am going to make next week and I know my husband would LOVE the buffalo chicken recipe (but I will have to find something mild for my kids to go with it that day).  I do chicken breaded with crumbs and parm a lot and the family loves them, but have never tried it with mayo- so I am planning on doing that next time, and unfortunately I love chick piccata, but I am the only one in my family that does. :-(  
    I love trying new things and can't wait to give all these variations a try!

    I like to cut the chicken into bite sized chunks when I make this and I serve it with some rice and broccoli. It's simple and delicious

    Chicken Piccata is amazing. And side note...Wow lady! You are really close to meeting those twins! I feel like you just posted your BFP. 

     Back on topic: 

    An easy recipe that I've done is season up some chicken breast with S&P, Chili Powder, Garlic Powder, Onion Powder, Cumin (any mixture of Mexican profile seasonings). 

    Throw them in the oven and let them bake. 

    Then I mix some ranch dressing, salsa, lime, S&P (to taste) and let that meld in the fridge. 

    Once the chicken is cooked the majority of the way, I squeeze some lime juice on top, spread the ranch/salsa mixture on it, and then top with shredded cheese and throw back in the oven long enough for the cheese to melt, which usually results in the warm ranch/salsa being warmed through. I like to search it on top of crunched up tortilla chips for some added texture. It's my own spinoff of a dish at Applebees that I liked.

  • One of my old faves is baked salsa chicken. Just put chicken boobs in the oven with salsa on top until they're cooked. Cover with cheese and stick back in the oven until the cheese has melted. I usually cook the chicken over corn or black beans and it's always turned out good. Serve with sour cream or guac, with extra salsa on the side.

    Dumb name, awesome recipe!  I have always used chicken breasts instead of thighs and it comes out great!
