HELP! Moms who cook...

We're hosting a few other couples for New Years tonight and I'm planning on just making some heavy hors deouvres. I'm looking for one more recipe (not a dip). A couple of the other things I'm making are somewhat time consuming so I need something I can kind of throw together pretty quick. Any suggestions??

  • I really like baked Brie and its pretty easy

  • Mini quiches are easy. Chicken or shrimp skewers are great too. For shrimp just put on skewer, then lightly coat in olive oil, salt, pepper and garlic (or garlic powder) then put in oven for 12 minutes. You can put a veggie or something on the skewer to make it look nicer too. For the chicken you could even use a store bought marinade.

  • I have a goto that is always loved, it's a cold veggie pizza. Take a can of pillsbury crescents and press the dough into a pizza pan, poke some fork holes in it to keep it flat and bake it. Then whip up some dill spread with mayo, cream cheese, and sour cream with dill and salt and pepper. Put it on the cooled pizza and then top with cut up veggies.

  • Pepperoni bread.

Get some pizza dough, let it rise.

Baste with olive oil and sprinkle with garlic salt.

    Place pepperonis on dough.

    Roll up.

Bake in oven at 350 for about 20 minutes or until dough is cooked through.

    Serve with marinara sauce.

  • This is a great bread dish.  I use whatever cheese and herbs I have on hand.

  • No matter where I go am I always ask to deviled eggs so just throwing that out there but they are not very festive.   Going along with the skewers you could do tomato mozz and basil skewers or an antipasto one with sausage, olives and such.   Flatbreads and bruschettas are good to and you can probably find a spread at your grocery.

  • Oh my gosh, I might have to redo my whole menu based off some of the suggestions here. They all sound sooo good. Totally flagging this thread.

  • I know this is technically a dip but it's so easy and so so good. It's basically feta douced in olive oil and sprinkled with red onion, green pepper, tomatoes and oregano. Bake until the feta melts and serve with pita triangles or crackers.

I also really like these cheddar cheese crackers. I don't bother with the assortment and just do them plain. I often serve them with chutney.

Then and now. How did my boy get so big?

  • Roast Beef Bruschetta

Slice french bread, brush with olive oil and brown

    Slice 4 Roma tomatoes

Dice 1 bunch of green onions

Slice a half a pound of roast beef

Cover each slice of French bread with chive and onion cream cheese, layer on roast beef, tomatoes, and sprinkle with green onion.

Bacon wrapped dates are awesome, but a bit time consuming.

Yes. I make these often. I sometimes stuff them with goat cheese or slivered almonds or both.

  • We d bacon wrapped sausage too. Really fast prep but needs to bake for about an hour. Cut a package of bacon in half, cut a package of original flavored breakfast sausage links in half, wrap and stick with a toothpick. Bake 1 hour at 350.

Oh. My. Gosh. Yes, this is a little more involved than I was thinking but I need goat cheese stuffed bacon wrapped dates in my mouth as soon as humanly possible.

Absolutely cheating. But maybe explains why it's so popular around here. We're actually bigger fans of the Maui Brewing Co. I plan on drinking my weight in Mana Wheat tonight.

  • Stuffed mushrooms are quick if you have a mini-chopper or food processor:

For 1-2 packages of whole mushrooms:

rinse and remove mushroom stems.  Chop up the mushroom stems (and any broken mushrooms) add 1 egg, basil, parsley, breadcrumbs, mozz or cheddar cheese(or both), a little EVOO  and mix together.Stuff into the mushroom tops and bake 350 for 20-25 minutes

Mini Strombolis- Take crescent rolls cut into half to make mini and 1/2 piece of cheese and 1/2-1 piece of cold cut meat of choice  and roll.  (Ive done this with pepperoni and american, ham and swiss, turkey and american, pepperoni and cheddar)

This is what I was going to suggest.  I wrap it in the Crescent roll dough and bake it.  Made it for my picky family this year and it was gone.
