Beat butter, confec sugar, and vanilla with mixer until fluffy. Gradually beat in flour. Divide dough in half and shape each half into a ball and flatten. Wrap with plastic wrap and refrigerate 4 hours. Preheat oven to 325. Grease cookie sheets. On a floured surface, roll each half and use cookie cutters to cut shapes. Collect scraps and reroll/recut. Bake 12 minutes. Makes about 80.
*this is the recipe my mom always used growing up, they are so simple and sooo good! After we cut out the shapes we always decorated with sprinkles before baking

I cook every day and am slowly getting better at baking but ill say last year I tried the Betty Crocker sugar cookies that have a snowflake cookie or something on the front of the bag. Very batch failed. The consistency was off. I don't know of it was the air or what but we tried 4 bags and I wasn't the only one that tried mixing it. I know I sound like an idiot cause its already mostly preprepared but we were in tears laughing so hard by the end of it. We could not get it to keep form. We added more flour to one batch to keep it together but the cookie tasted like straight flour.
I think we just had a random weird experience though. Good luck with whatever you decide
Not sure if you're still looking, but here's my favorite recipe. I've tried several different sugar cookie recipes, and this is the easiest dough I've worked with. I also like that the finished cookies are a little on the softer side, especially once they've been frosted. I quadrupled the recipe this past week for cookie exchanges and teacher gifts, and ended up with 11 dozen. That will of course vary depending on your cookie cutter size. Have fun!
SUGAR COOKIES
? c. shortening
1 c. granulated sugar
? c. unsweetened applesauce
1 ? tsp. vanilla
2 ? c. all purpose flour
1 tsp. baking powder
1 tsp. salt
In a mixer bowl fitted with the paddle attachment combine shortening, sugar, applesauce and vanilla thoroughly. In a separate medium bowl, combine flour, baking powder and salt with a wire whisk. Add to shortening mixture and mix on low until combined. Chill dough in refrigerator for one hour or more (I sometimes cheat and only do 30 minutes, or 15 minutes in the freezer).
Preheat oven to 400 degrees and line baking sheets with parchment paper, set aside. Roll dough to ? inch thickness on floured board. Dip cookie cutters in flour and cut out desired shapes. Bake 8-10 minutes or until very light golden (I cook mine 7 minutes). Cool completely on baking sheet.

You can buy a mix...you use your own finishing touches (ie. sprinkles) and no one will know the difference.
I always find a good recipe on this site https://allrecipes.com/
