Easy Dinners Ideas?

I'm putting together a grocery list and we are seriously in need of some new dinner ideas.  Now that I'm back at work, I need quick meals...and two-year-old friendly (though he's less picky than I am Stick out tongue)

Suggestions please?

  • If you are comfortable using a crock pot while you are at work, you can do lots of things with frozen chicken.

    I really like Tilapia. It is very mild (I'm not a big fish person) and super quick to cook in the oven. DS always eats it up.

    Shrimp is also quick to cook and DS likes it.

    I make a yummy easy pasta toss with shrimp and the fake crab meat. Toss in butter and lemon juice. Add chopped tomato and basil.

    Another really easy meal. Fry bacon, leave the bacon grease in the pan and saute onions in it. While doing that boil cheese tortellini. Chop up the bacon. Toss cooked tort, onions, and bacon pieces together in the bacon grease. So freaking good.

    Tacos are always a good, easy meal. I would have them every week if DH was okay with that but he isn't as big as a fan of them as I am. I try to change it up and make it taco salad or nachos sometimes.

    I wish tacos were easy in my house.  Cut up the tomatoes, onions, pickles (yuck), bake the shells or fry the shells whichever you do.  Cook the meat.  Drain the meat.  Get everything out and ready including the cheese and lettuce and sauce.  OH, and don't forget the rice and beans for those that HAVE to have them.  Oh, yeah, that's me.   

    But to be fair, we do eat them at least two nights in a row.  But with all the dishes and stuff, those things are a nightmare.

  • I make homemade chicken nuggets. Cut a chicken breast into bite sized pieces, toss the pieces in breadcrumbs and cook in a skillet in olive oil. Pork chops are also easy. I buy thin cut, season with salt,pepper and sage and cook in a pan in OO. Serve with applesauce and potato salad (I always buy it pre made). Jarred red cabbage is also good and cooks in the microwave.

  • This is kinda a mix between chicken tortilla soup and chicken chilli -

    1 big box chicken broth

    1 brick pepper jack cheese - shredded

    2 cans white northern beans - not drained

    1 jar salsa

    2 big cans of chicken (or 3 chicken breast shredded if you have time)

    Tsp of cumin

    1/2 to 1 cup of fritos - crushed

    Mix everything together on the stove till the cheese is melted. Add fritos about 5 minutes before you want to serve it. Pour into single serve bowls and add a couple fritos on top.

    * for what its worth my 2 year old loves it.

  • Tofu scramble is an easy meal! I'm not sure if kids like tofu usually but this is so good and it looks like scrambled eggs.

    It's just:
    Tofu pressed and then crumbled with a fork
    Can of black beans
    Salsa
    1 cup frozen corn
    Salt and pepper to taste

    Just put everything in a skillet and heat everything through. Probably about 5 to 10 min.

  • Brown rice with frozen chopped spinach, ground beef, onions, garlic and mushrooms.

    Cook the rice and jusy throw the spinach in frozen and about half of the other veggies. At the same time, brown the meat with the rest of the veggies. Toss them all together when done, salt and pepper to taste and Parmesan if you have it. Onedish meal, only two pots used, cheap and easy to make a lot of for lunch leftovers.
  • Breakfast for dinner is always pretty easy.

    I make this chicken penne. Saut bite sized chicken pieces add some Italian seasoning salt and pepper. Add spaghetti sauce. Then cooked penne. Get it all hot and add mozzarella to it. Lb of pasta to a lb and a half of chicken. Little more than a jar of sauce and cheese to your liking.
