I just combine chopped or shredded cooked chicken, mayonnaise, chopped celery, and chopped apple (any red apple). Sometimes I'll put it between two pieces of wheat bread, but I prefer to have it in a pita pocket.

I second the croissants. I forgot about the grapes option. Also delicious.

I usually use the leftover rotisserie chicken and chop it up really good. I use mayo, either celery or some chopped walnuts for a crunch, and some sliced grapes for a bit of sweetness. I add in some Mrs. Dash and call it good.
