Aww, thanks for remembering! I did have my appointment on Friday and I haven't done an update anywhere so you didn't miss anything.
It went okay. We didn't get any answers for anything which isn't too surprising. But he did recommend some dietary changes and has me on a whole bunch of supplements. I'm supposed to up my protein and veggies intake and minimize my carbs and sugars. I'm also eating a protein smoothie in the mornings. He recommended doing another test for food sensitivities to test for gluten, milk, soy and eggs but it costs $400+ so I think that we won't be doing that right now. So the plan is to go gluten free for 4 months and see how that goes.
We were given a bunch of information in a short period of time so we are still trying to process. It wasn't the miracle appointment we were hoping for but at least there is a plan in place.

I'm sorry you didn't get any answers! That's so frustrating! $400 is alot of cash. And there's no gaurantee that those tests will give you any answers either!
If you're eating low carb/sugar, make sure to increase your fat intake as well. I know it sounds silly, but your body needs to burn energy and if you don't give it any, you'll feel terrible. Normally your body uses carbs/sugar as it's primary source of energy, then goes to fat when you run out of those. So if you have no carbs and no fat, you're going to feel really tired and crappy.
I eat bacon and eggs every day. Healthy fats like eggs, omega-3s, avacado are great. You can put avacado on alot of things you eat. And cooking with butter makes things delicious. Coconut oil is also great. I use alot of almond flour and coconut flour now instead of wheat flower.
I stay away from soy as well as it's a GMO and it really messes with your hormones. When you read labels, watch out for soy lethicin. It's in almost everything! I could go on, but I'll stop! I hope this diet change works for you!
My DH has alot of these issues, which is why we are really careful/aware of what we eat. GL with the diet! or I should say new lifestyle! lol
