I've made a Mexican casserole with lean ground turkey taco meat, corn tortillas, lots of salsa, black beans and corn and reduced fat cheese. Just put it together like a lasagna. It's really good!
Yes. You totally can. When STBXH and I were married he would make fajitas with 90% lean ground turkey and go heavy on the veggies. UseLF sour cream and LF cheese and go heavy on the salsa.
Brown rice (add cilantro and lime juice after its cooked), black beans, sauteed bell pepper and onions, corn, avocado, and jalapenos or serranos for some kick...Mix it all up in a bowl and dig in! You wont even need tortillas or dairy. So yummy!

Yep, plant based fats aren't what you need to worry about, it's the animal fats that are bad.
That's all I was going to add, everyone has it covered. Avocado is actually really good for you. Lots of sources say it's near to being a perfect food loaded with essential fatty acids, protein, vitamins and minerals.
This is seriously the best chicken taco recipe ever. I put sour cream on, but they really don't need much in terms of toppings because they already have salsa in them and they have a ton of flavor. Just use low sodium stock.
Oh, and make your own taco seasoning. A lot of the premade ones have a lot of sodium. I put mine into little tin foil packets measured out for 1 to 2 lbs of meat, but I'm anal like that. Also, Pinterest! I've gotten soooooo many good recipes on there!
