when is breast empty

How do you know when the breast is empty?  I never knew/understood about the foremilk/hindmilk thing and finally did a little reading on it.  I read that, to prevent an imbalance, you should make sure that baby empties the breast.  So how do you know when that happens?  Do I just keep her on the breast until she's done?

It will be really really soft.. like softer than prepregnancy boobs.

Yes, just let her eat on one side until she stops. She may or may not take the second side. A breast is never entirely empty - it makes milk on demand.
