DH is on this really strict diet for the police academy and is worried about Thanksgiving. He wants me to make a healthy side dish to bring to MILs but he doesn't like ANY kind of cooked vegetable. I am thinking of making some type of whole grain risotto with cheese, pine nuts, cranberries, ham maybe? This is all just ideas but I can't really find a recipe online. Anyone have a recipe idea for me??

There are a lot of wild rice recipes that sound just like this. You coud add in quinoa, too.
