Mom friendly bread recipe!

I should say, everybody friendly bread recipe, because homemade bread was one of those things I had deemed not worth the time and the tears to make. But this recipe. Is. Amazing. No kneading required, and you leave it sit on the counter forever before baking it in the oven.

    I did! I made a loaf mistakenly with expired yeast that didn't rise well, but I made another yesterday and it turned out BEAUTIFULLY. I'm having some for breakfast! And that's what I like about it, too... after DD goes to bed I can mix it up in less than five minutes, and then bake it whenever she naps the next day.

  • It's basically the NY Times' No Knead bread recipe.  Cooks Illustrated has a better version.  I find the NY Times version really bland.  The texture is right, though.  FWIW, we've made both many times and they work every single time.  Don't skip the 15 second knead and flour part (that's in the CI recipe) or the loaf will stick like mad.  It needs a bit of flour on the outside to keep it from sticking. 

    There are also tons of variations and entire books based on no knead bread making.  It's a "revolution" of sorts.  It's also a super easy way to make homemade bread!

  • I love homemade bread, and I have found that the stand mixer with the dough hook does a great job kneading for any bread recipe, you just have to let it run for about 8-10 minutes.

    This is good to know! I kept meaning to try it using the dough hook, before I found this.

  • Well I've got a loaf in the oven :] it smells great! I use my dough hook fairly often to make bread, but I like that I don't have to roll this into a loaf. Definitely a simple recipe. Thanks for posting!
