     Butternut Squash Gratin 


    Ingredients
    Butternut squash, 8 cups cubed (3 ? lbs) 
    Olive oil 
    Kosher salt 
    Butter, ? stick 
    Leeks, 3 cups sliced 
    Sage, 1 ? tsp chopped 
    Goat cheese, 5 ? ounces 
    Whipping cream, 1 cup 
    Panko bread crumbs
    Parmesan cheese 

    Equipment 
    Baking sheet 
    Medium white dish 

    Instructions
    Preheat oven to 400?F. Place butternut squash cubes and olive oil in large bowl; sprinkle with coarse kosher salt and ground pepper and toss to coat. Spread out squash cubes on large rimmed baking sheet. Roast until just tender and beginning to brown, stirring occasionally, about 35 minutes. 

    Meanwhile, melt 3 tablespoons butter in heavy medium skillet over medium-low heat. Add sliced leeks and chopped sage; sprinkle with salt and pepper. Saut? until tender but not brown, about 15 minutes. Coat 11x7-inch baking dish with remaining 1 tablespoon butter. Spread half of leek mixture over bottom of prepared baking dish. Sprinkle with half of squash and half of cheese. Repeat layering with leeks, squash, and cheese. DO AHEAD: Can be made 1 day ahead. Cover and chill. 

    Preheat oven to 375?F. Pour cream evenly over gratin. Bake uncovered until gratin is heated through and cream is bubbling, about 30 minutes (40 minutes if previously chilled). 


    Timeline
    - Tuesday evening: roast squash 
    - Wednesday morning/evening: prepare gratin 
    - Thursday: remove from fridge 1-2 hours before turkey is finished. Bake in oven while turkey is resting.

  • Butternut Squash Dip

    Ingredients:

    10 oz box of frozen butternut squash

    1/2 cup fat free sour cream

    1/2 cup grated Parmesan cheese

    Pinch of salt

    Fresh ground pepper

    Directions:

    Microwave squash according to package instructions. Spoon the squash into a mixing bowl, add sour cream, cheese, and salt. Mix to combine. Pour into a bowl and serve with freshly ground pepper. This dip goes well with crackers, bread slices, or veggies. There are recipes that use fresh squash, but it's harder to get the smooth texture like you will get using frozen.

  • Not sure what crumble recipe means, but here is one of my favorite ways to use butternut squash: SOUP!

    Secret ingredient is cream cheese. I've never met anyone that tried this recipe that didn't go absolutely bananas over it. Now I want some for lunch *sigh*. Om nom nom.

    6w5d ultrasound showed one perfect baby with a beautiful heartbeat of 134bpm!
