We have a Canon Rebel.  We had one before and replaced with the same because the photos are fantastic.

I have the Nikon D60 - I wish I knew how to use it better

I use a Canon rebel as well, the XT. My advice is to get an older model like the XT - you don't need the extra megapixels and the features between the XT and the XTi aren't that different. I don't know about the newest model though, maybe they upgraded it.
