When people talk about stink, is the problem that the diapers still stink after they are clean and dry? Or just in the dry bag/pail after they are dirty? I feel like the bag smells pretty bad once it's time to wash them (every other day), but I figured this was normal since it's full of pee and poop. Lately the bag does seem to be a little more rank and maybe a little more ammonia-potent. After washing and drying them, they smell pretty neutral - not good, not bad.
Also, is stripping a process that you're supposed to do every so often, or just once they start smelling/repelling?
We use Charlie Banana pockets exclusively and have used them about 4 months. I wash them in a top loader in homemade detergent made with Borax, Washing Soap and Oxyclean. I dry them outdoors about 80% of the time.

Generally, when people talk about stink they are referring to clean diapers coming out of the washer/dryer or freshly peed in diapers.
As in, you should not smell ammonia or barnyard on your diapers as you take them out of the washing machine. They aren't clean and should be washed again. Or, if your kiddo wets in a diaper and it smells like barnyard or reeks of ammonia you have a problem.
Diapers that have been sitting will smell like ammonia naturally, and that is normal. ON diapers will also smell like ammonia, and it's usually NBD. Most people only strip if there is a problem, although I do occasionally run a hot water strip as a preventative. Some do bleach once a month.
