Does anyone have a tried and true recipe for these two things? I am making a pumpkin pie for DS's Thankgsiving feast at school and I'm wanting to take a pumpkin roll to my family Thanksgiving dinner. I did find some recipes but wanted a tried and true in case - thanks!

This. I use Libby's canned pumpkin and there is a recipe on the back. I've never made a bad pie with it.

This is my Grandma's recipe for pie crust and for the pumpkin filling.
I make it every year!
Pie Crust:
2 Cups flour
1 Cup Crisco
1 tsp salt
1/3 cup cold water (estimate based on the stickiness of your pie dough before adding water)
Blend the flour, crisco, and salt together then add the water to help everything stick together. Then knead the dough, roll, etc.
This does make two pie crusts!
Pumpkin filling:
1 Cup Pumpkin (the real stuff-not the pumpkin pie filling)
1/2 Cup sugar
3 eggs (beat first)
1/2 tsp salt
1 tsp cinnamon
1/8 tsp. cloves
1/4 tsp all spice
Mix the above together in a bowl.
Then add 1 Cup milk and 1 tsp Vanilla.
Bake at 425 (F) for around 15 minutes and then turn down to 350 (F) for another 45-60 minutes until the knife comes out clean. The baking part is mostly by trial and error! I test it every so often as to not over cook it.

Pumpkin Cake with Cream Cheese Filling Rolled Jellyroll Style
3 Whole Egg
1 Cup Sugar
2/3 Cup Canned Pumpkin
1 Teaspoon Soda
1 Teaspoon Cinnamon
3/4 Cup Flour
1 1/2 Cups Powdered Sugar
1 1/4 Stick Butter or margarine
1 8oz. Package Cream Cheese
1 Teaspoon Vanilla
Beat eggs slightly. Add sugar, pumpkin, soda, cinnamon, flour. Mix till blended
Grease cookie sheet and place waxed paper on it. Grease waxed paper. Spread with cake batter.
Bake at 350 for 15 minutes. While cake is baking, lay a kitchen towel on the counter and sprinkle with part of the
powdered sugar. When cake is done, turn onto towel, remove waxed paper, sprinkle with powdered sugar and roll
up (with towel) into a roll to cool.
While cake is cooling, mix butter, cream cheese, vanilla and 1 cup powdered sugar. Mix till smooth.
When cake is cool, unroll, spread cream cheese mixture onto cake and roll back up. Roll in waxed paper and
refrigerate. When ready to serve, slice into 1" slices.
Best way to describe it is Angel kisses on clouds. It is THAT good.
