Recipe help - pumpkin pie and roll

Does anyone have a tried and true recipe for these two things?  I am making a pumpkin pie for DS's Thankgsiving feast at school and I'm wanting to take a pumpkin roll to my family Thanksgiving dinner.  I did find some recipes but wanted a tried and true in case - thanks!

Re: Recipe help - pumpkin pie and roll

  • I always use the recipe on the back of the pumpkin can for making pumpkin pie. Turns out great every time (plus, you can use it as a grocery list while you're at the store to make sure you have everything).
    Pass the sheet cake.

This. I use Libby's canned pumpkin and there is a recipe on the back. I've never made a bad pie with it.
  • Okay, lol, that's exactly what I did then!  I thought if all else fails use this so I bought those ingredients.  Thanks!

  • My MIL makes a yummy pumpkin roll, in fact, some years they make dozens and sell them. I just messaged her and asked for the recipe. I'll update when she gets back to me.
  • I have a pumpkin roll recipe my SIL uses and she bakes simpler things. I'll go look for it after Nat goes down.

  • Now I want pumpkin pie.
  • This is my Grandma's recipe for pie crust and for the pumpkin filling.

     I make it every year!

     Pie Crust:

    2 Cups flour

    1 Cup Crisco

    1 tsp salt

1/3 cup cold water  (estimate based on the stickiness of your pie dough before adding water)

Blend the flour, crisco, and salt together then add the water to help everything stick together.  Then knead the dough, roll, etc.

This does make two pie crusts!

     Pumpkin filling:

1 Cup Pumpkin (the real stuff-not the pumpkin pie filling)

    1/2 Cup sugar

    3 eggs (beat first)

    1/2 tsp salt

    1 tsp cinnamon

    1/8 tsp. cloves

    1/4 tsp all spice

Mix the above together in a bowl.

Then add 1 Cup milk and 1 tsp Vanilla.

Bake at 425 (F) for around 15 minutes and then turn down to 350 (F) for another 45-60 minutes until the knife comes out clean.  The baking part is mostly by trial and error! I test it every so often as to not over cook it.

  • For pumpkin roll I use the Libby's recipe. Google "Libby's pumpkin roll" and it's on the website verybestbaking.com. I've been making that recipe for years and it turns out great every time.

  • What's a pumpkin roll? If it's anything like a cinnamon roll, I'm definitely missing out on something awesome.

  • Pumpkin roll is a pumpkin flavored cake rolled around a cream cheese filling. Like a jelly roll cake.

Best way to describe it is Angel kisses on clouds.  It is THAT good.
