Hi ladies! Here's an exchange for vegan recipes or even vegetarian that could be altered easily into vegan. Please share...we all can use a little change here and there!

Before getting pregnant I was eating a plant-based, vegan diet for the past 9 months. Since week 6 the thought of vegetables just isn't appealing to me at all, and I've been eating junk. Maybe this will help me to go back over to the healthy side!
Yea, hopefully this can jumpstart some healthy eating. I am not vegan but I cook for a vegan couple and am always looking for new dishes. That being said, I don't mind eating vegan meals and it's nice to do them here and there even if not every day. My husband is a beef lover but even he wanted this chili!

This is not a recipe, but we were out to dinner with a friend and her husband who always eats really healthy stuff. He ordered a salad with 'vegan chicken' and when the waitress left he was like, 'wow this chicken is going to be so awesome.' My friend looked at him and said 'you know it's not actually chicken right?' His face fell and he was like "I...thought...vegan meant they only fed the chicken healthy food?"

I'm usually cooking up a vegan storm, but I have zero interest in the kitchen right now. I think hubby is getting tired of making me tofu scramble, after I whine that I don't feel like cooking but I need more protein for the day. lol. (Protein usually isn't an issue for me, but I'm having to cut back on legumes because of the carb content, so it's a little trickier right now.)
I just ordered Terry Romero's new cookbook. I'm hoping that inspires me to get cooking again!
And pretty much anything out of Veganomicon makes me happy.
Did you follow Vegan MoFo this year? I didn't because everything that attracted me was dessert. So I stopped looking. But I love Bobbi at the Vegan Crew's Vegan Pinterest Boards for Inspiration!

The Veganomicon is AMAZING!! The chickpea cutlets are my fave, and the pumpkin and baked ziti is so addictive!
We're having our second annual "Vegan Thanksgiving" this year (we're not traveling to see our families this time so we'll be at home with a few friends). It was a big hit last year. Mashed potatoes with caramelized onions, stuffing, crock pot sweet potato casserole, roasted brussels sprouts, chickpea cutlets and Tofurkey with yeast gravy (with nutritional yeast...so good!), and pumpkin and pecan pies! I can't WAIT! It beats the pants off of going to my family's thanksgiving and eating some green beans with a bowl of canned black beans or something haha.
ETA: We have a good amount of vegan/vegetarian/plant based ladies on this board! How lovely
