I made this last night, and just had leftovers for lunch - it's delicious! I subbed out feta for the blue cheese because that's what was in the fridge. Disclaimer: I'm not a vegetarian, but this is meatless, and I think it could easily be modified to exclude all animal products if you want to go that route (it uses a little dairy).

I second ohsheglows.com - her recipes are amazing, and are vegan. I also love dailygarnish.com. For healthy (but decadent!) dessert recipes, check out chocolatecoveredkatie.com. The deep dish cookie pie is amazing - it's made with chickpeas, but don't let that scare you away!
