Pie vs regular?
I bought a pie pumpkin at the store because it was the perfect size needed for DS to paint and decorate with this spider kit I bought.
I would guess regular pumpkins aren't good for cooking or baking with but there's no reason you can't decorate a pie pumpkin, right?

I had no idea they grew pumpkins just for pie making. That's cool.
I am very lazy and use canned pumpkin. Or just buy the pie. Either way, you make me want pie. Thanks, Chaps!
I remember wanting to make a pumpkin pie one year and my mom and aunt were like, "eww, you can't use that pumpkin" Which was a regular sized one. I just wasn't sure if the sugar pumpkin or 'pie pumpkin' as they were labeled in the store, maybe rotted sooner or something. As long as it lasts a week, it will be fine!
Yes. I find sugar/pie pumpkins easier to carve as well and I like the size, so we sometimes get them for carving. They are more expensive though.
While you *can* bake and use the larger carving pumpkins, we tend to avoid them because they are stringy and I don't like the taste/texture.
Best bet for baking is canned pumpkin - I learned that from my friend who happens to be a pastry chef. Turns out it's one ingredient that benefits from massive processing.

We get pie pumpkins from our CSA, so I do it then. But it's a pain. A total pain.

You don't unshell them. Eat them as is.
We roasted ours last night, Just rinse them in cold water and remove any guts. put a thin layer of oil on a baking pan and put the seeds down and slide them around til they are coated and a single layer. Salt and put in the oven at 350 for 10 minutes, then stir them up a little then go for another 15-20.
Like the other poster said, we eat the shells.
I take my seeds, soak them in a brine overnight. Then I toss them in a little butter and Red Rocks Hickory Seasoning (from my favorite spice shop) and roast in the oven until toasted. Then I threaten everyone with a sharp knife if they come near.

Oh yes. I do love them so. I made some last year that were like spicy sweet pepitas. OMG. So so so so so good.
