When I was a kid we use to use a pumpkin knife. Sorta like a butter knife, but had dull ridges, orange handle and picture of pumpkin on end.

The only ones I've seen come with those little saw knifes and they suck.
My mom had one that lasted for years which was much more sturdy. I can't find them anywhere

Also try Michaels. I've given up on using those though. I use a drill and a dremel, dremel makes carving attachments. I use a metal ice cream scoop to get the guts out.
And then I quickly clean dh's drill before he has a heart attack.

Yeah, I hate those kits with the plastic scoop and crappy cheap saw knifes.
I need something with a little stability to it
