We make boilermarker tailgate chilli and it is yummy. We usually cut this recipe in half.
Ingredients
2 pounds ground beef chuck
1 pound bulk Italian sausage
3 15 ounce cans chili beans, drained
1 15 ounce can chili beans in spicy sauce
2 28 ounce cans diced tomatoes with juice
1 6 ounce can tomato paste
1 large yellow onion, chopped
3 stalks celery, chopped
1 green bell pepper, seeded and chopped
1 red bell pepper, seeded and chopped
2 green chile peppers, seeded and chopped
1 tablespoon bacon bits
4 cubes beef bouillon
1/2 cup beer
1/4 cup chili powder
1 tablespoon Worcestershire sauce
1 tablespoon minced garlic
1 tablespoon dried oregano
2 teaspoons ground cumin
2 teaspoons hot pepper sauce e.g. Tabasco
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon cayenne pepper
1 teaspoon paprika
1 teaspoon white sugar
1 10.5 ounce bag corn chips such as Fritos
1 8 ounce package shredded Cheddar cheese
Heat a large stock pot over mediumhigh heat. Crumble the ground chuck and sausage into the hot pan, and cook until evenly browned. Drain off excess grease.
Pour in the chili beans, spicy chili beans, diced tomatoes and tomato paste. Add the onion, celery, green and red bell peppers, chile peppers, bacon bits, bouillon, and beer. Season with chili powder, Worcestershire sauce, garlic, oregano, cumin, hot pepper sauce, basil, salt, pepper, cayenne, paprika, and sugar. Stir to blend, then cover and simmer over low heat for at least 2 hours, stirring occasionally.
After 2 hours, taste, and adjust salt, pepper, and chili powder if necessary. The longer the chili simmers, the better it will taste. Remove from heat and serve, or refrigerate, and serve the next day.
To serve, ladle into bowls, and top with corn chips and shredded Cheddar cheese.

*1 teaspoons dried oregano

*If you're doing a white chili, stop here with the ingredients. For a classic red chili, add:
--1 can tomatoes (I like the diced fire-roasted with green pepper, but you can also use crushed, regular diced, whole)
--1 1/2 Tbsp chili powder
--2 tsp paprika
*And chili "secret" ingredients (use all, none, or some)
--1 chipotle chile in adobo sauce
--1/2 tsp cocoa powder
--6 oz of beer
--half can of pumpkin

Add the garlic and cook for about 30 seconds, until you can smell them
Add your protein/meat and brown it.
If you're cooking it stovetop, then add the remaining ingredients and bring to a boil, simmer until thick, 45 min- 1 hour.
If you're cooking it in a crockpot, throw all the ingredients, including the protein/meat into a crockpot and cook on low 6-8 hours.

1 cup water
1 teaspoon sugar
One eighth teaspoon ground red pepper [cayenne]
In a 5 quart stock pot, in 1 tablespoon of olive oil, cook chicken until tender. With slotted spoon, remove chicken to bowl; refrigerate until ready to add back into chili.
Add butter to same pot over medium heat; cook green and red peppers, onion and garlic until vegetables are tender, stirring occasionally. Stir in chili powder and cumin; cook 1 minute. Stir in kidney beans with their liquid, tomatoes with their liquid, tomato paste, green chili peppers, water, sugar, and ground red pepper; over high heat; heat to boiling. Reduce heat to low; simmer, uncovered for about 25 to 30 minutes, stirring occasionally. Add chicken and heat thoroughly.
I serve with blue corn chips and sprinkle cheese over top. It's delicious!
I'm on my way to the store to buy the ingredients for a crockpot chili for tonight's dinner (and lunch several days this week!) Others have already given great recipes, but I think chili is one of the best things to just wing. Try throwing in different things: I like adding zucchini in addition to red, green, and yellow bell peppers. Good luck!

I love cornbread or corn muffins with chili. I get Jiffy mix because it's delicious, cheap, and easy.
