NBR: Foolproof cake recipe rave

Last night DH pulled one of his "Um I need to bring something in for a work party tomorrow" moments.  I wanted to make something, since I'm known at his work for sending in goodies, and he just moved to a new department where I haven't sent in anything yet.

But it was last night, and I was feeling lazy, so I took some shortcuts.  I tend to separate my eggs and beat the yellows till thick and whites till stiff, then fold them together for a nice tall cake.  I didn't.  I basically through all the ingredients together, and threw it in the oven.  When it came out, it was UGLY.  Kind of crispy looking, and falling apart a bit.  And the wax paper got entwined in the batter.  And it didn't rise very much.  I figured I'd cover it with a coffee buttercream and at least it'd look pretty.  But when I added the coffee to my frosting, it kind of curdled up a bit.  So I frosted my ugly cake with ugly lumpy frosting, ran a hot offset spatula over the whole thing to smooth it, and sent it in with him.

He texted me to let me know he thinks it's the best cake I've ever made.

So here it is- probably the easiest cake recipe in the world, because you just can't mess it up.

Chocolate Cake

  • 4 eggs (I usually use large, but I used extra large because that's what I had)
  • 3/4 cup sugar
  • 1 tsp vanilla
  • pinch of salt
  • 6 oz semisweet chocolate chips, melted (half a bag of chocolate chips)
  • 1/2 cup cake flour
  1. Preheat oven to 350.  Cut a piece of wax paper to fit the bottom of a tube pan (or bundt pan).
  2. Beat the eggs and sugar until light in color.
  3. Add vanila, salt, and melted chocolate and beat until everything is combined.
  4. Fold in the cake flour.
  5. Pour the batter into the pan and bake for 45 minutes.

  • Isn't it funny how sometimes you think something is awful but others love it? I made chocolate chip zucchini bread and thought it tasted weird so I wasn't going to make it for Gator's birthday party. SO took some to work and his co-workers loved it.....and he brought some to his family and they loved it. So I guess I am the ones with the awful taste buds.

    I've never done chocolate chips in my zucchini bread, but I love zucchini in my chocolate chip cookies!
