We are going to an all inclusive resort in Mexico for Christmas, i'm obviously worried where our 2 year-old will sleep. She sleeps in a crib at home, would they give us a crib? What did you do?
Have you asked them? You should probably start there. When we took DD to Hawaii at 18 months I looked up Maui baby rentals since we were staying in a condo. We had the company deliver the crib and had it set up where we requested before we arrived. It was pretty nice. Earlier this year when we took the kids to Disneyland DH just shared a bed with her while I was with DS.
Have you called the resort and asked? That would be where I start. Many hotels offer cribs (or PNPs) for free or for a nominal fee. If not, you can fly with a PNP or let DD sleep between you and DH in bed - that is where DD usually sleeps when we are on vacation. It is either that or on the floor on a folded up quilt.
We have a baby Bjorn travel crib that goes everywhere with us. It is pricey but Dd has been sleeping in it since she was 6 weeks old and it has gotten a lot of use. She is still in it as we speak on our current trip.

We've coslept on a few vacations (we were cosleeping at home anyway at those times) and we had a hotel crib once too. We're going to Disney in December and I'm not sure what we'll do. She has a toddler bed at home so I'm thinking to just make a "bed" on the floor with blankets and pillows.

Depends where we are. If it's my parents' house or my IL's, they make a bed for her on the floor with blankets and pillows. If we're at a hotel, we make sure there's 2 beds and she sleeps in one and we sleep in the other. When she was < 1 year, we would bring the pack n play with us.
When she was younger we would take our PnP or I would check with the resort to see if they have a crib/PnP. Now she shares with us or in her own bed if we get more than one.

They should be able to provide you with a crib but we had one in Jamaica a couple years ago and it was more like a cheap wooden pack n play. DS has been to Mexico 3 times and he just sleeps in bed with us or if we have 2 dbl beds with one of us. I push the night stand up again his side of the bed and put a pillow against it. After a day in the sun and pool he was always so tired he didn't move all night!! Have a great time! I love Mexico!!!!
Before switching to a toddler bed, DD1 slept in the PNP. Now that we need the PNP for DD2, DD1 sleeps in a sleeping bag on the floor or on a thing air mattress.
