I like to take boneless skinless chicken breasts and create a marinade for them of mayonaise, garlic powder, cayenne pepper, salt, pepper, and paprika. Let them sit in that for at least 30 min. Then take some panko bread crumbs and add some garlic powder, cayenne pepper, and paprika. Bread them. Bake at 375 for 30 minutes and done. They are super moist and yummy! A fb friend gave me this idea and it is a real hit in my house!
I also do another similar version where I just use mayo and flour and Italian breadcrumbs and some parmesan cheese. Also delish!
I think the mayo makes it - they don't taste mayonaissy at all (if that is a word)!
I cut an acorn squash in half and bake until soft. Then saut a couple cut up breasts in olive oil and whatever seasoning I feel like. Cook a package of Uncle Ben's long grain and wild rice. Mix the chicken and rice together and serve it in each squash half.

Combine the
dressing mix, oil and vinegar in a large, resealable plastic bag and mix
together. Add chicken to bag, seal and shake to coat; work mixture into
the meat.
Refrigerate to marinate for at least 1 hour, or overnight if possible.
Preheat oven to Broil/Grill.
Remove
chicken from bag, discarding any remaining marinade, and broil for 10 to
15 minutes or until cooked through and no longer pink inside.
