Bakers! I have a question!

To all the bakers of the group! I want to bake muffins for LO daycare for next monday to celebrate his birthday. His party is Sunday and between friday and saturday I will be spending lots of time doing party stuff. How early could I bake these muffins and how do I store to make sure they stay nice and fresh.

 

I am making a banana muffin and a corn muffin.TIA!

    If I did that, and lets say maybe the thursday or late friday and just froze them for over the weekend, When would I take them out? Sunday night, I also don't want them to get like soggy. I am clearly not a baker or someone who does good cooking. I try but always seem to fail. I'm no good at storing food either. lol
