Now that I have joined the ranks of 2U2, I am going to be taking back on the joy of cooking dinner ( we've been lucky to have my mom bring us food).
I am thinking crock pot meals are my best/easiest option that I can throw together whenever in the morning.. but am really open to any good, quick meals.
Anyone have some favorite go to meals they would like to share?

My advice- cook in bulk when possible and think about getting two to three meals out of basics like chicken (ie. chicken in a crockpot w/salsa can equal chicken tacos night one, chicken over rice night two and finally chicken enciladas night three)
If you like going meatless at all, a favorite of ours which is SO simple
Saute two bell peppers (I usually prefer a yellow and red) with an onion and a dash of olive oil. Add a can of rinsed kidney beans and a can of tomato paste and 2/3 cup water. Cook down for about five minutes. Add 2 teaspons cumin (if you have it handy) and a dash of salt and pepper.
Serve over brown rice.

The flavors work really well together
I am not a measurer.... so if you need exacts, I may be the wrong person to offer advice.
We love Cilantro Lime Chicken.
Marinate Chicken breasts (or pieces) in a ziploc with the juices of three limes, a spash of olive oil, and a bit of fresh cilantro. IMO cilantro can be overdone so I get a bunch from the market and take two swipes off the top w/a knife. I am guessing it's a half of cup.
Let it marinate for a few hours or overnight.
Either grill, bake, or crockpot.
If you crockpot, consider shredding for tacos. Super yummy!
With the left over cilantro (see recipe above), I make yummy fish tacos.
I buy frozen filets from costco. They have a good tilapia. I back a couple of them.
Flake them apart. Place in corn tortillas w/cheddar cheese, tomatos, a dollap of sour cream and top w/cilantro.
I like this recipe because most of it can be kept on hand at any time. The fish is frozen and tortillas keep forever.... so when I have cilantro on hand, the rest is ready to go!
