We often make quinoa salad-- basically taking any pasta salad and substituting the pasta for quinoa (well, I wouldn't do it with a mayonaise-based recipe, but anything light). Our easy go-to recipe is chopped veggies (peppers, tomatoes, cucumbers, etc.-- whatever we have around), fresh herbs if we have them (basil or parsley works well), fresh mozzarella if we have it, quinoa, and Italian dressing. It's the type of thing the allows a lot of flexibility.
