Until recently, I kept DD's dirty diapers in a pillowcase in an open hamper type thing. Then they started to smell. I thought maybe it was ammonia, so I did all kinds of cleaning and they still smell not a super strong smell every time she pees, just as they are sitting around for a day or two. So, I'm thinking it's just cause she's older/pees more 18 months. I bought a large Planet Wise wet bag to attemp to contain the smell, and it does not AT ALL! Anybody else have this problem or suggestions?? Thanks!

You could get a small trash can with a swing lid. They're not airtight, so it gets some air, but the diapers aren't open to the room. Diapers do smell more in summer months, so if you don't have a cover/zipper, you're going to have more odor.
I'd be inclined to say ammonia means you're using too much detergent, but if they're not smelling until LO pees on them, it could just be the 18 month pee. I'm not familiar with how pee changes with an older baby.
For me, I have a push top trash can with a cloth laundry bag. Keeping it shut does help the baby room from getting too stinky, but I use a half size trash can so I remember to do laundry before too mcuh time passes. If there's a couple really stinky diapers, I'll usually wash sooner.
