My husband and I are trying to think ahead of possible baby names and are stuck on the boy's name. We would love to honor both of our grandpa's (Charles Harvey Stricker & Jack Dempsey). We both LOVE Jackson as either a first or middle name, but we are stuck when it comes to something creative from my grandpa (Charles). We do not like the normal variations of Chuck, Chaz, Charlie etc. We also love unique names (for a girl, we are considering Averlyn Helene). Any ideas on how to honor my grandpa, even if it requires using his middle or last name?

I don't think you have to go too creative with the middle name, honestly. I think Jackson Charles sounds terrific. If you want to think more "out of the box," you could use Stricker. Jackson Stricker also works really well.
Just a word of caution---Jackson really isn't that unique. It was ranked #23 on the SSA list last year, and has been steadily climbing the charts. I expect it to be a Top 10 name in the next few years.
Since you like something a little more different...have you considered Dempsey as a first name? It's kind of cool, and I love using family surnames as first names. Dempsey Charles would be neat.

I think Dempsey as a first name is unique but not crazy. Dempsey Charles is good! Or I like the other suggestions: Jack Harvey is a such a great name in my opinion
