If you are willing to try making your own, this is my family's favorite recipe. Like *any* gluten free bread, it's not fantastic just plain all by itself. But toasted or made into french toast, it's perfect. Once it's cooled and sliced, freeze it and take out what you need by the slice. GF bread does not keep at room temp.
Ener-G Light Tapioca loaf (the regular version is not as good) I really like this bread and don't think it tastes much different at all from regular sandwich bread. My son even loves it!
I also make bannock using chickpea flour and it is really good. (1 cup flour, 1 cup water, 1/2 to 1 tsp salt, and 1 tsp baking powder (along with any spices you'd like to add) mixed with enough water to make a dough and then cooked in olive oil over medium heat for a couple minutes on each side)

This is a little late- but I *LOVE* Canyon Mountain Bakehouse. If I could get it locally, I would. Otherwise, Rudi's and Udi's are both pretty great.
GF bread will always, I think, taste better toasted.
