My first class for the GD is not for 3 weeks.... apparently thats to soonest they have an opening?
Is it just enough for me to be aware of what I eat ... skip more desserts than I would have, eat a few less carbs
OR should I be more concerned and see if there is another option on getting a class and testing supplies sooner?

Can you call your doctor about this? I think you are fine. If it were an emergency or life or death, then they wouldn't even think to make you wait for three weeks, but I wouldn't want to take any chances.
My NP has GD, right now, and she was telling me some of the things she has to avoid. I had no idea. It might be worth it to see if your doctor has any tips on things that might get you started or get you going in the right direction.
I think 3 weeks is a long time to go if you don't have any prior diabetic education. I would call your doctor on Monday and let them know.
However, you can go to any pharmacy and purchase a meter and it usually will come with about 10 test strips. (Downside here is you have to actually purchase the meter; a lot of times when you go see the nutritionist, they either give you a lot of samples or they give you a prescription). But if you go buy one, you can monitor for at least two days to kind of see what your numbers are... Usually they want you to test once in the morning "fasting".... and for me, and from what I hear is the case for a lot of women (but obviously not all), they want you to test two hours after meals (my meals are lunch and dinner). And of course you can buy more test strips without a prescription, they're a little more, but not horrible.
In the mean time, I would change your diet the best that you can. If you are a heavy dessert girl, I would cut down for now. Switch to good carbs like brown rice and whole wheat. Adding in the fiber helps keep numbers down a lot of the time. Also, add in protein, that helps too. Look into "free" snacks: string cheese, beef jerky, pickles.... there are more, of course.
Anyway, this is all just my advice/opinion, of course. I know three weeks would definitely be too long for me to have to go without knowing what my blood sugar readings were.

Ask your OB, but in my case, no 3wk was not acceptable. I took the class at a different hospital per my OB just to get in sooner. (I had GD last time but not this time)
The most important thing to know is that you can not eat carbs without eating protein as well. So eat some cheese or peanut butter with that apple or eat it after a serving of chicken. Fruit juice is typically forbidden, as are watermelon and pineapple, but other fruit is ok when combined with protein. Back away from breakfast cereal and white bread. Resign yourself to eating a boatload of eggs, meat and cheese in the near future.
