Dessert suggestions

So tomorrow my family (the 7 of us, my brother's family (4) and my parents) are having a picnic at a park and ending with a lunchtime barbeque. I got dessert duty (and the "bring whatever else suggestion" thanks mom). Normally I'd be full of ideas, but I'm literally fried. I've been outside all day, holding a garage sale (and set up, and tear down, sheesh) - I'm beat. I have no problem making something from scratch, all that's available for store bought today is the gross stuff (long weekend here).

Help, throw out suggestions for desserts. I'll probably do two. Trifle is one my shortlist. And pie, maybe. It is going to be pretty hot here too, I have a cooler, but I'm thinking a heavy dessert may not sit well in the stomach.

  • I made my first peach pie today. Four of them! I highly recommend it! I put in a few blueberries too.

  • We had dessert duty for one BBQ this summer during a heat wave and we brought a cooler full of popsicles and ice cream treats.  It was a big hit!
    Stay at home mom to a house of boys: two amazing stepsons, 12 and 9, and our 4 year old.

  • Easiest dessert ever. We call it "The Stuff".

    -Bag of Chips Ahoy

    -Tub of Cool-Whip

    -Milk

    -Serving bowl/casserole

    Dunk cookies in milk and then put down a layer of them in your dish. Cover them with Cool-Whip. Repeat until you run out of cookies and/or Cool-Whip. Refrigerate until you are ready to go.

    BAM.

    One of my friends sent me a recipe this morning that is brownies, enhanced. Grab a muffin tin, a tray of Pillsbury chocolate chunk cookies, 12 full size Reese's PB cups, and brownie mix. 1 1/2 - 2 cookie slices in the bottom of each cup, PB cup on top in the middle, pour brownie batter on top and bake. Still tempted to make it.

    My cousin made this for a BBQ at my house last month. I can personally say these were awesome!

  • Cheesecake stuffed strawberries. They're perfect bbq dessert and are always a hit.

  • Blueberry cheese cake bars. They have a sugar cookie crust, lemony cream cheese filling with a swirl of blueberry sauce. They are tasty and quick.
