DH and I are planning to go to NYC when he graduates his masters degree program at the end of May 2013. We would be going with his dad and stepmom. His stepmom mentioned that it would be fun with the baby coming along also, he will be around 7 1/2 months on this trip. I live in FL, so it would be a 2 hour flight for us. DH is very against bringing the baby to NYC. We have my parents to watch him if needed, but I kind of want to bring him. His stepmom said their friends use to take their babies everywhere. Am I naive to think I can enjoy NYC with my little baby boy?

No way, NYC is very baby friendly. There are lots of them.
You may have more freedom without him (which would be the case anyway) but heck, I live here so obviously it's very doable.
We've taken DS everywhere with us since he was born - a trip to NYC when he was 6m old (with another one coming up at the end of this week), several trips to FL, etc. WHY is your DH against bringing the baby? Does he think that you won't be able to enjoy yourself? Or does he envision this trip as a romantic get-away, even though his parents will be there? I think you need to explore that line of thought first.
That said, we had a perfectly lovely time in NYC with DS (we were visiting DH's family, not just doing touristy stuff, but still). We took DS with us out to a really nice dinner (he chilled in his carseat, then slept after he ate), took the subway with him, etc. We wouldn't go to a Broadway show with him (although if your ILs will keep the baby, you & your H could still go & have a night out alone)
He doesn't want to because he thinks it will be a huge hassle. We love to walk around all day and explore NYC when we're there and he doesn't think that is possible with a baby. Now, hearing that multiple people have done it, I think its definitely an option! I'm thinking once he sees how portable the little guy is, he'll really want him to come, too!!
Its absolutely do-able. NYC is very very baby friendly (I live here in the Financial District). Most people just strap their little ones into the Baby Bjorn and off they go. There are also tons of parks and play areas to enjoy. Just bring a good light stroller that he can snooze away in when you don't feel like holding him.
If you don't bring LO, don't go to Battery Park City or Tribeca. They are the most family run areas and you will seriously be missing your LO. Even central park is swarming with strollers.
Subways can be a little tricky with strollers, only certain subways have elevators. but if there are 4 adults going, carrying it up and down the stairs won't be a big deal.
Also no one here lugs around a car seat. Maybe that's what your DH has in mind.
