If you have LATCH, use LATCH. My car has LATCH only on the outboard seats, so we installed ours with the belt in the center seat. It really doesn't matter which you use, so long as you do it correctly.

I agree with this. There are a few cars that have the LATCH system in the center. Your car's owner manual will help you decide if that is the case for your car. Most car manuals don't allow "borrowing" the LATCH system for the two side seats.
LATCH is pretty simple, but with the the Chicco Keyfit, the seatbelt is pretty easy. When we had our seats checked at the fire department, the guys called the Keyfit 30 the "20 second car seat". They showed me how to attach it with a seatbelt, and it actually took less time than hunting around for the LATCH hooks. We used LATCH because it's there, though.

I would try installing it both ways....then whichever way you can get it tightly and correctly installed is the way I would choose.
LATCH isn't safer than the seatbelt install. They're both just as safe when done correctly!
