I bought some beets at the farmers market, and I have no idea how to cook them.  My favorite way to eat my veggies is roasted w/ olive oil S&P 'till they get a bit carmelized.  Can I do this with beets?  I'm not opposed to having them in salad, either.

I love roasted beets.  You can definitely prepare them that way. You can either roast them and then slice (in which case the peel will rub off after cooking) or slice and roast - when I do it this way I peel them first.

I clean them really well and steam until soft. Then I peel and season.
