4-5 medium zuchinni/summer squash
1-2 cloves garlic, minced
1 tsp fresh thyme, chopped
4-6 tbsp fresh basil, chopped
1/2 cup parmesan cheese
1 cup cheddar cheese
Salt and pepper
Half zuchinni/squash and cut into 1/4 inch half moons, put in large bowl. Add thyme, basil, parmesan, half of the cheddar and season to taste with salt and pepper, stir to distribute everything evenly. Lightly spray or oil an 8x8 baking dish with oil, add zuchinni mixture. Bake at 350 for 25-30 minutes, top with remaining cheddar and bake until cheese turns a light golden brown, about 15-30 minutes.
This makes 4 large portions (184 calories each) or 6 side portions (123 calories each).
