We would always do this when I was growing up. We'd make a large thing of potato salad and have that whenever we'd grill out. The night we got there, we'd always order pizza since we'd get in rather late. For lunches we always just had make your own lunch meat sandwiches.
We are heading to the lake for a few days - but just the 3 of us LOL. I'm doing beef shishkabobs We're also taking a tub of Lloyd's pulled pork, but for a crowd you could cook a giant batch in the slow cooker there, or before you go. I'm doing a pasta salad and that's easy to just double for a crowd. I bought a whole, round watermelon and a ton of other fruit. I got some of those little cake cups and you could do little fruit tarts for dessert.
