I made this shrimp for dinner last night. So quick and easy and everyone loved it including my 18 mo old. You can pair with noodles or rice and veggies. I paired it with some crab cucumber cream cheese rolls and steamed dumplings.
Recipe: Melt a stick of butter in foil lined pan. Slice one lemon and layer it on top of the butter. Put down fresh shrimp, then sprinkle one pack of dried Italian seasoning. Put in the oven and bake at 350 for 15 min.
Cut zucchini in half lengthwise, then make cuts to hollow out centres, leaving some around the sides. Brown up some ground beef (or chicken) and mix with the zucchini bits that you cut out, some canned tomatoes, onions and whatever else you like. Fill up your hollowed zucchinis with the mixture and top with feta (or whatever you like), and grill or bake till melty and the "boat" has softened to taste.
Stick a baguette in oven/grill to crisp up while you bake and dinner is done!

Also, meatloaf is a good one. I have a good recipe for cheesy potatoes (of course, not with me!) but I'm sure you can find one on allrecipes.com. Both of these freeze amazingly well.
Pulled pork sammies are the bomb, or spaghetti & balls of meat. Mmm.

To answer the original question, I love to do pasta. Two of our favorites are pesto noodles with chicken apple sausage and bow tie pasta with italian sausage, broccoli, and parmasean. We also do BBQ chicken with cornbread in the crockpot, and crockpot chicken tacos.
Crockpot chicken tacos are the bomb! I do one 2.5-3 lb bag of frozen chicken, one 16oz can of salsa, and 1 pack of taco seasoning. Cook on high for 4-5 hours. Shred the chicken and serve with whatever you like for taco toppings. My hubby loves nachos with the meat.
I love to cook chicken in the crockpot. You can just throw it in frozen and let it cook for 4 hrs. Add whatever seasoning you want. It shreds easily.
The other day I cooked 3 small breasts with a packet of ranch seasoning. Then I shredded the chicken. Took cresent rolls, spread cream cheese/sour cream mixture on it, topped with baby spinach, the chicken, and shredded cheese, fold over the cresent roll and bake until golden brown. YUM! That went fast. No leftovers from that meal.
