I wanted to update you that I made an eggsalad sandwich today and used ground mustard per your suggestion. It tastes pretty yummy, but I may have used too much. It is a tad on the spicy/strong side?
How much do you typically use?
ps. my Duke's is perfect today though. Yumz.

I just add it to taste, no set amount. But a little goes a mighty long way!
I'm glad that someone agrees with me that the only acceptable mayo is Dukes.
I think I went way overboard. I sprinkled a little, then a little more, then a little more. I think I wound up with about three or four "dashes" in my mixture (which only had two eggs). I bet if I use less next time I will love it. I kept waiting for it to get that "yellow" look like you get when you use regular mustard and since it didn't I kept adding more. Whoops.
And yes, there is just nothing better than Duke's. Hellmans and all that other junk can suck it.
