It's summer vacation time for us, so I'm posting this early. Have a great few weeks. Don't worry, we'll be back!

DD requested a square lunch, so here it is! Mini homemade sealed sandwiches, a checkered apple, cubes of tomato, cheese and crackers, and a square piece of cookie. Not terribly cute, but she was happy!

Another playdate lunch! They were identical except for the picks in the sandwiches, spelling out their names. Here's a close-up:

Mini sealed sandwiches with snap peas on the left (they're so much prettier cut in half!). On the right is an apricot, cheese, Goldfish, a mini container of ranch dip, baby carrots and a donut hole (left over from our arctic theme day).

Minnie! We're trying to empty out the fridge, so I had to scavenge around for this lunch! In the top tier is an apricot, raisins, Goldfish, a few cookies and crackers. In the bottom tier is a Minnie sandwich with bow pick (I got the cookie cutter from Party City), cashews, cheese slices, carrots and celery.

Not cute! I was going for a "pool" theme but just didn't have the right motivation! Leftover pasta (with corn, bacon and basil - yum!) and a little extra Parmesan in the container, an ice cream cone silicone of blueberries, donut hole, apricot with the words "pool" written in picks, halved cheese stick and some carrots. Meh.

PIP your cute lunches here and have a great June! It would be so fun to surprise your unsuspecting kiddo with a little summery themed lunch or snack!

    This is what I use to make the mini sealed sandwiches. I also have a "Krustbuster" that I got on Amazon to make full-size sealed sandwiches (I got mine a few years ago; they now sell similar items in grocery stores and they may actually work better because they're not on a hinge).

    For the checkered apples, you take a sharp paring knife and score the lines both ways. Then use your thumb on the knife to gently remove the peel on every other square. You can probably Google/YouTube "checkered apple," too. It's kind of trial and error, but a sharp, thin knife is helpful. If you're not using it right away, you'll need to do something to keep it from browning.
