June 2011 Moms

What's for dinner this week?

Let's here them ladies - what are you planning on having for dinners this week?  And, have anything really  awesome lately you want to share?

Us:
M: Spicy Chicken Sandwiches
Rest of the week:
- Tacos
- Chicken Parm, Noodles and parmesan
- Burgers
- Pizza

I can't think of anything really great we've had lately.  I've been too busy to try anything new really, and everything else has just been the super basics.  Well, our jimmy John's on Saturday night was pretty awesome though!

  • Tonight we're having Asian Peanut Noodles because I actually have some time to make it and need to use up the fresh stuff before it goes bad. It was really yummy the first time so hopefully it is again:  https://www.skinnytaste.com/2011/04/asian-peanut-noodles-with-chicken.html

Tomorrow will be something easy since it's my work day and I never feel like cooking.

The rest of the week will include Lentil Tacos (one of my faves), Sausage & Potato Skillet Sizzle (new) , Teriyaki Chicken in the crock, and maybe Taco Bites.

M: turkey and black bean enchiladas (They are leftover from yesterday. Very good! But I used regular cheese, not reduced fat.)

    T: Strawberry chicken salads

W: Thai shrimp (also a skinnytaste recipe but I don't have the link handy)

    R: Leftovers

F: Hopefully roasting hotdogs and marshmallows in our new fire pit!

Weekend: parties to go to, family visiting, who knows?

Last week we had really good broiled tilapia.  I seasoned it; broiled on each side for 2-3 minutes; poured a mixture of mayo, lemon juice, chives, parmesan cheese over it; broiled again for 3 minutes to brown the topping.  Very good and quick for a weekday! Also, I tried the crockpot french dips in Telly's blog.  Easy and yummy!

  • It's a very Asian week for some reason.

Tonight we're having Thai steak salad to use up some cabbage

Later on we're having lettuce wraps, Red curry chicken (just got a jar of curry sauce from trader joe's, that's an easy meal), and, to mix things up, pasta primavera.
