Need some easy and fast dinner recipes.

Hi Ladies,

I mostly lurk on here but I am running out of ideas for dinner. My feet and back are killing me so I need some recipes that I wont have to stand for long and is easy just to put together after a long day of work. We aren't too picky, so any recipes will help.

  • This is an easy staple to our menu.  If you like tuna, that is.

    Tuna Cassarole.

    1 onion

    I can cream of mushroom soup

    I can peas

    2 cans tuna (you can use one if you want, but I like tuna, so I use 2)

    Tablespoon butter or margarine

    grated parm (1/4 to 1/3 cup)

    Shredded cheese (cheddar, marble, mozzeralla, whatever)

    3 cups pasta (penne, rotini, macaroni, whatever)

    dill (fresh or dried to taste).

    Prepare pasta according to directions, but leave al dente.

    In a bowl combine chopped onion with butter and microwave on high for 1 min.

    In large casserole dish, combine, cream of mushroom soup, tuna and drained peas.  Mix well.  Add onion.  Drain pasta, rinse and add to cassarole dish.  Mix well to combine.  Add grated parm and some shredded cheese and mix well.  You can add as much or as little cheese are you like.  Add a few shakes of dill and stir again.  Cover top of casserole with more shredded cheese.   Microwave the whole thing on high (covered) for 10-12 minutes.  Great as leftovers the next day and freezes well.  My 2.5 yr old DS says its delicious and has 2nd or 3rds.

    Other easy options, fajitas or tacos.  Sloppy joes.

  • I love our crock pot for times when I don't want to cook. I have a feeling we are about to start using it more because cooking makes me nauseous.  Here are a few of my favorites

  • Mmmm sounds tasty! We have been doing sloppy joes, tacos, hamburger helper, and stuff in the crockpot, I'm just getting tired of the same ole' stuff. Fajitas sound tasty too.

  • Last night I did meatball subs... mine were fake meatballs since I'm a veggie but I think you can buy frozen real ones too right?  You just simmer the balls, hehe, in sauce for like 20 min (if you buy pre-cooked ones).  Then if you want you can saute some peppers and onions but I've done it without too to make it easier... then pile those on a roll, put some mozzarella on top and stick in the toaster for a few minutes to melt the cheese... super easy and DH loves it, even with the fake balls.  I put mine on whole wheat rolls and they're healthy also.

  • this is quick and easy and lots of leftovers

     

    Spaghetti pie

     

    Ingredients

    ?         1 box of long spaghetti

    ?         1 lb of ground hamburg meat

    ?         1 24 oz jar of baking sauce

    ?         1 pack of mozzarella cheese

    ?         grated parmesan cheese

    ?         1 egg

    ?         butter or margarine

    ?         1 container of sour cream

     

    Directions

     

    ?         saut? the hamburg meat until it is cooked all the way through, drain the fat and set aside

    ?         while you are cooking the hamburg meat also boil a pot of water for spaghetti (cook whole box)

    ?         when spaghetti is cooked drain and add about 3 tbsp of butter (you want spaghetti to be coated), then add grated parmesan, start with 3 tbsp and add as needed (you want to be able to see the parmesan on the spaghetti)

    ?         crack egg, beat with fork and add to spaghetti (the egg is to keep the dish together so it doesn't fall apart)

    ?         put the spaghetti mix aside and go back to the hamburg meat

    ?         add the jar of sauce to the meat and mix together

    ?         pre-heat oven to 350 degree's

    ?         in a pie dish (you will need 2) or a rectangular shaped baking pan (it needs to be deep) pour the spaghetti mix into the pan.

    ?         top the spaghetti with the full jar of sour cream (almost as if you are frosting a cake)

    ?         pour the hamburg and sauce mix over the sour cream

    ?         sprinkle the mozzarella cheese all over the top

    ?         bake in over at 350 degrees for about 10 minutes (or until mozzarella cheese is melted)

  • Try some crock pot recipes!  I do fajitas a lot because it's so good and soooo easy.  Flank steak (or any meat of your choice), salsa, peppers (any color), and onion. Put it in the crock pot all day. Just heat up tortillas when you get home.

    I do pulled pork in the crock pot a lot too because DH loves it. I usualy grab boneless pork ribs so I don't have to pick out any bones and just mix with sweet baby ray's. Buns.. you can buy side salads or sometimes I will make a big pasta salad or potato salad at the start of the week and have it for lunches and sides for dinner during the week.

    We do salads a lot because those are quick and easy. I will usually grill chicken a couple nights before and just buy bagged salad and toppings and that's easy and quick.

    Sometimes I will make things in advance to shove in the freezer and just throw in the oven too. Lasagna or meatballs. I make meatballs and just throw them in and freeze them and make sweedish meatballs or spaghetti and meatballs.

    tonight.. it's grilled cheese and tomato soup. lol  I sooooo dont' feel like doing anything when I get home.
