I just found out last week I failed my 3 hour test I am having a hard time coming up with meals or snacks with only certain amount of carbs. Anyone that has/had this, do you have any tips, recipes, websites or anything to help.
Thanks !!

I had GD and was fortunate enough to have a consult with a dietician. Are you able to get that support? It helped me tremendously! I had the eating thing all wrong! I'd eat cereal and fruit in the am (worst time of the day for sugar/carbs), and I found I wasn't eating enough. My last meal was around 6:30pm and I wouldn't get up to eat until 10am the next morning, thank you BR
In the morning, I'd have eggs or peanut butter and maybe a low-carb slice of toast or sandwich "thin". I found a carb-wise yogurt that was good and cottage cheese. For snacks, veggies galore and a little dip, string cheese, cubed chicken breast or any lean meat. Nuts were also a mainstay of my diet.My Dietician gave me some tools for seeing the recommended amt of carbs on the label of most food. I found if I stuck to "real" food and not as much processed food, it wasn't too difficult. To this day I still keep the principles of the GD going. You can never go wrong with a lean protein and veggies. We also did a lot of salads and you can even top them with ground turkey or beef and make taco salads without the shell! Corn tortillas for tacos are a better carb choice than flour, for dinner meals. We love chicken parm, so I'd use chicken breast (unbreaded) with a little marinara and cheese with salad for dinner, as well.
i take my 3 hour test Wednesday and i have a feeling i am gonna fail.
Anywho, i used to be on a low-carb diet when i was trying to GET pregnant. This book has AWESOME recipes if you want to try to cook something other than just meat and veggies for dinner!
I did meet with a dietician, but he pretty much just gave me papers with carb info and told me to write down everything and I have a follow up thursday. I just feel like I constantly eat the same things over and over, so I am looking for new ideas

HTH!
Snacks: Nuts, hard boiled egg, hummus with veggies, cottage cheese.
I've heard there are some good recommendations in the Insulin Resistant Diet book...
