What's in your favorite spring salad?

I'd like to have a nice, light spring salad at a bridal shower I'm hosting this weekend. I need inspiration pretty please.

  • I always aim at a green+fruit+cheese+crunchy

    Oranges have been really great at our store lately, so I love spring mix, orange slices (cut peel off with a knife and section oranges out with a knife so you leave all the membrane behind, easier to eat in a salad), and then maybe goat cheese and pine nuts?

    or there is always strawberries and feta, you know that's one of my faves! :)

  • Mmm this post sounds delicious! I love cranberries, orange slices, mixed greens, nuts and feta/gorgonzola. And a light vinaigrette.

  • I made a killer grilled chicken salad.  It was italian blend lettuce (though you could sub others), grilled chicken, fresh strawberries, feta, toaseted pecans, and lightly dressed with strawberry poppyseed vinegarette. YUM!

    Spinach, strawberries, mandarin oranges, grilled chicken, those crunchy chow mein noodles with poppyseed dressing.  Mmmm... so yummy!

    I do this, with walnuts and a simple balsamic vinaigrette. Yum!

    I like Carla's basic formula, too, but I would say "nut" instead of "crunchy". Seriously, I don't know that you can go wrong :) 

  • I love a spinach, strawberry, pecan and blue cheese salad with balsamic dressing.  A teacher that I work with makes it and gave me the recipe for Em's Baptism. Everyone loved it.

  • ohh also, if you aren't wanting to make a dressing (although the ones above sound awesome!!) my go-to bottled vinaigrette is the Girard's champagne vinaigrette, either the light or the original. So good and they go with anything!

  • I just love rocket and pear with parmasan!

     green apple, mayonaise and peacans

    carrot, coconut and sultanas

    or just a fancy green salad with mango :)

  • Like others, I do a strawberry/spinach salad. I follow this recipe almost exactly, just a touch less sugar so it's not too sweet. I get compliments every single time I make it (which is often).
